ABSTRACT

Fermentation could be described as a process in which microorganisms change the sensory (flavor, odor, texture etc.) and/or functional properties (i.e., microbial health benefits) of a food to produce a desired product to the consumer. In this chapter, particular emphasis is placed on how these changes are beneficial to extend the shelf life and influence the safety of the product.
