ABSTRACT

Potato is a staple food in many parts of the world and an integral part of much of the world’s food supply. It is the world’s fourth-largest economical food crop following maize, wheat, and rice. The word “potato” may refer either to the plant itself or to the edible tuber. Wild potato species can be found throughout the Americas from the United States to southern Chile. In 2014, world production of potatoes was 382 million tons, an increase of 4% over 2013 amounts, and led by China with 25% of the world total. Other major producers were India, Russia, Ukraine, and the United States.
