ABSTRACT

The brewery is one of the cornerstones of a city. Its heart belongs to the community. It has struggled and prospered, it has changed hands, and it has closed its doors during one generation to see it reopen in another. It has always continued to adapt to the environment in which it is challenged. This adaptation can be seen with the craft beer movement and its new beer types and flavors. The variety of beer has also brought about new consumer awareness of these brands, and they tend to be supported locally. There is an entrepreneurial spirit that embraces the past but that also looks forward to the future (further details in Chapter 22). This craft beer movement has a parallel with the distilled spirits community.
