ABSTRACT
The fruits of the genus Capsicum are a traditional ingredient in the cuisine of several Latin American and Eastern countries, although its use in food has spread to other parts of the world through food globalization and the development of fusion cuisine. Chilli consumers can choose according to their preferences among a variety of shapes, colors, avors, and pungency level.
