ABSTRACT

Vegetables are essential components of human nutrition. They provide vitamins (e.g., vitamin C, folate, provitamin A), minerals (e.g., potassium, calcium, and magnesium), dietary ber, and other bioactive compounds (e.g., carotenoids, phenolic compounds, organosulfur compounds). Increasing intake of vegetables and fruits is one of the principal recommendations of dietary guidelines for healthy eating worldwide.
