The genus Vibrio encompasses a large number of gram-negative, curved-rod, facultative aerobic, non-spore-forming bacterial species that include several well-known human foodborne pathogens (e.g., Vibrio cholerae, Vibrio parahaemolyticus, and Vibrio vulnificus) (Table 41.1).
