ABSTRACT

Hospitality education is a relatively new academic arena which has expanded and developed rapidly (Williams, 2005a, 2005b). This growth is evident in Australia where the number of hotel/hospitality undergraduate degree programmes has evolved from two educational choices in the 1970s, to more than 40 degree programmes offered by 30 institutions today (Breakey & Craig-Smith, 2011). This growth reflects similar patterns in other countries such as the UK (Airey & Tribe, 2000; Craig-Smith, 1998), the USA (Boger, 2000; Chathoth & Sharma, 2007) and, more recently, China (Gu & Hobson, 2008; Xiao & Liu, 1995) and Brazil (Knowles et al., 2003). Institutions that offer hotel/hospitality undergraduate degree programmes include universities, hotel schools, and technical/polytechnic colleges. Approaches to curriculum and delivery vary from institution to institution and sector to sector.
